Who loves meatballs? We do! A great dish for kids and adults alike. Serve with your favorite tomato sauce, over pasta, in a sandwich with melted mozzarella or as is with a great hunk of bread.
Makes 4 servings
1 pound ground beef
¼ cup plain breadcrumbs
¼ cup parsley, chopped
2 eggs, slightly beaten
1 tablespoon milk
1 tablespoon tomato paste
½ cup Romano cheese, grated
½ teaspoon salt
½ teaspoon pepper
¼ cup of olive oil
Making the Meatballs:
In a large bowl, stir together the breadcrumbs, parsley, eggs, Romano cheese, tomato paste, milk and salt and pepper.
Add the ground beef and gently mix to combine.
Form the ground beef mixture into 1" pieces and and continue to mold with your hands into round balls, using up all mixture.
Frying the Meatballs:
Heat the olive oil in a large non stick frying pan on medium high heat.
Working in batches, add the meatballs and cook without moving until brown on the bottom, about 2 minutes. Turn the meatballs over and brown the other side, about 2 minutes longer until cooked through and transfer to a warm plate.
Once ready, add to your already heated tomato sauce and mix to blend, careful not to break the meatballs.
Serve at once.
